Roasted garlic mashed potatoes are a favorite with many garlic fans and cooks alike, as they’re a snap to make and go great with virtually anything.
Mashed potatoes are a tried and true side dish and roasting garlic is one of the easiest way to cook it so you don’t have to worry about mincing it or how long to saute it, etc.
A cast iron garlic roaster can also speed up roasting and is a great item to have on hand, especially if you’re a garlic fan and find yourself often making roasted garlic mashed potatoes or other dishes that require roasting.
You can use any type of potato for this recipe, as sweet potatoes also work great as well as red potatoes or other standard potatoes.

Roasted Garlic Mashed Potatoes Cooking Directions:
1. Cut off about 1/2″ of the tops of the heads of garlic and drizzle each with about 1 tbsp of olive oil. Wrap each in aluminum foil and roast at 400 degrees for about 30 minutes.
2. While your garlic is roasting you should cube the potatoes (leaving them unpeeled or peeled, depending on preference) and boil them for 20-25 minutes, until they’re fork-tender.
3. Drain the water from the pot and mash in milk, cheese, butter, salt, and pepper. When the garlic is roasted remove foil and squeeze out the roasted garlic into the bowl and mix thoroughly.
4. The consistency of the mashed potatoes is up to you, so simply keep stirring/mashing/mixing until they’re as smooth or as chunky as you prefer.
